Recipe Monday

I may start to post a good recipe every Monday. I say "I may" because I don't even know if people read this blog and I've started to feel discouraged. Therefore I'm setting up a poll. Please vote and let me know that you care that I blog :)

Merry Berry Cheese Bars

2 cups unsifted flour
1 1/2 cups Oats
3/4 cup + 1 tbsp packed brown sugar
1 cup butter softened
1 (8oz) cream cheese package softened
1 (14oz) can sweetened condensed milk
1/4 cup lemon juice
1 (16oz) can whole berry cranberry sauce
2 tbsp corn starch

Preheat 350'. With mixer, beat flour, oats, 3/4 cup brown sugar, and butter until crumbly. Set aside 1 1/2 cup of that mixture. Press remaining mixture on bottom of greased 13x9 inch baking pan. Bake 15 minutes or until lightly browned.

With mixer, beat cheese until light and fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice. Spread over baked crust. Combine cranberry sauce, corn starch, and remaining 1 tbsp brown sugar. Spoon over cheese layer. Top with reserved crumb mixture.

Bake 45 minutes or until golden. Cool and cut, put in refrigerator.

These are a great holiday dessert!

So I'm wondering... how necessary is the sweetened condensed milk? Could just sugar be used? I'm out of the milk part so I'm thinking of improvising. ::)
